Our quest to work through all the vegan restaurants in Singapore continues. Last Sunday we went down to The Living Cafe on Bukit Timah Road after having been recommended by a friend. And it did not disappoint.

After perusing the menu, we decided to get the Veggie Delight (vegan version) pizza, the raw Zucchini Lasagne and one of the specials on the board which was cashew 'cheese' wrapped in cucumber slivers.

So, first up, the cashew 'cheese' and cucumber starter arrived and you can imagine how intrigued we were to see what all this cashew cheese business was about.

It was delicious. And it tasted like cheese.

So fresh and light, but still satisfies those cheese cravings!

Then, our mains arrived. Now, the reason why Lizzy and I are such perfect pals is because we are both sharers and at this point we don't even need to say 'shall we share?' because its an inevitability. The raw lasagne was so much nicer than I was expecting. Really creamy and, again, light! You don't get that carb-induced slump that you usually get after a massive plate of pasta.

The Veggie Delight pizza was also a revelation. The pizza base was almost biscuity, and the vegetables on top - pumpkin, shitake, sweet pea, tomatoes, zucchini, onions, capsicum - tasted really fresh and sweet.

Get. In. Our. Face.

We really enjoyed our Sunday lunch here, and it set us up for a full day of running errands and other adulting stuff. It's a bit out of the way, but we'd recommend planning a hike to the top of Bukit Timah, and heading to The Living Cafe after for a well-deserved re-fuel!
